Associate Professor Jian Zhang has been collaborating with the Sydney Fish Market (SFM) for the past 18 months on a fish data collection project to identify the freshness of fish.

The technology being used is AI based image processing and computer vision technology. The technology focuses on fish eyes, skin and gills which have been given a predetermined freshness score by experts at the SFM. This freshness score is combined with image processing technology to create an algorithm to identify the freshness of the fish.
One of the biggest challenges was the different lighting conditions under which images were taken. A solution to this dilemma was the creation of a light box (pictured below) which assisted in unifying the light conditions.

Once implemented, this technology will replace human bias and tedious labour with an effective computer-based digital system. It is hoped that this technology will support emerging e-trade systems both within the SFM and throughout Australia.
